Simple Savory Roasted Sweet Potatoes

First you must decide…to peel or not to peel?!

I always used to be a peeler, but I’ve found I actually prefer not to peel my sweet potatoes anymore. In addition to adding a little extra ‘crisp’ when you’re roasting or making fries, the skin also provides additional nutrients and fiber!

I love to make up a batch when I’m meal prepping for the the week. 2 large sweet potatoes will provide about 4 servings. And I can use them up in a variety of ways. Here is how I reheated them today. I added them to my breakfast bowl with scrambled eggs, avocado and a little hot sauce. YUM!

You could have a burrito bowl for lunch with shredded chicken, black beans, veggies, salsa, etc…the possibilities are endless!

Makes 4 servings.

Ingredients

  • 2 large sweet potatoes
  • 2 teaspoons olive oil
  • 3/4 teaspoon garlic powder or granules (or to taste)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste

Instructions

  1. Wash and scrub potatoes thoroughly. Dry well.
  2. Cut sweet potatoes in half length-wise, and then cut each half into 4 long strips. Chop each of the strips into small cubes.
  3. In bowl, toss the cubes with oil and seasonings.
  4. Line a cookie sheet with parchment paper – I think it helps with crispiness.
  5. Bake at 425 degrees for 25-30 minutes or until desired crisp, flipping once halfway through to make sure that all sides get crispy.

Does this require equipment?

Weights. How much weight depends on you. Someone who has never weight-trained likely won’t need a lot, but Sagi would use a ton (maybe literally). For the most flexibility in your weight selection, we recommend a 50-lb. adjustable set to start. If you want a low-cost place to start, we recommend getting a set of each range of dumbbells: light (3 lb.–5 lb.), medium (10 lb.–20 lb.), and heavy (25 lb.+). Then adjust your weight assortment based on your ability and progression in the program. You will also need a bench or stability ball and a pull-up bar or resistance bands with a door attachment.

How long are the workouts?

Four 45-minute workouts and one 25-minute ab workout designed to work your entire body focusing on different muscle groups each day:

Summer Vegetable Medley

Medley seemed like a happy way to describe my absolute favorite side dish to make in the summer time with some of the yummy garden veggies that are season right now: zucchini, summer squash and tomatoes.

Let’s be clear, I don’t grow these veggies, because my thumb is not even close to green. I am happy to support my local farmers! 🙂

I’ve been making this for years…and it’s always a hit! Even the kids like it – I think the cheese helps. Because seriously…everything tastes better with cheese!

I always make enough to enjoy the leftovers for a couple of days.

 

 

Ingredients

  • 2 cups of cooked brown rice
  • 1 T. olive oil
  • 2 medium zucchini
  • 1 medium yellow squash
  • 1/4 cup chopped onion (more or less to taste)
  • 2-3 cloves of garlic (minced)
  • 1 t. basil (fresh is great too!)
  • 1 t. paprika
  • 1 t. dried oregano
  • sea salt and pepper to taste
  • 1½ – 2 cups chopped tomatoes (garden fresh are BEST!)
  • 1½ cups shredded sharp cheddar cheese (divided)

 

Directions

  1. Precook your rice and set aside 2 cups. (I use my Instant Pot for perfectly cooked brown rice SO much faster than the stove!)
  2. Preheat oven to 375° and spray a 9 x 13 inch pan with cooking spray.
  3. Heat the oil in a large skillet over medium heat. Add zucchini, squash onion and garlic and saute for 5 minutes or until tender.
  4. Season with basil, paprika, oregano, salt and pepper.
  5. Mix in the cooked rice, chopped tomatoes and 1 cup of the cheese. Continue to cook until heated through.
  6. Transfer to the baking dish and top with remaining cheese.
  7. Bake uncovered for 15-20 minutes or until cheese is melted and bubbly.
  8. Remove from the oven and dig in!

 

FIX container equivalents: 1 green, 1 yellow, 1/2 t., 1 blue

My week 1 meal plan is finished! Sharing it here will help me stay accountable to it, and you’re welcome to steal, borrow, print, duplicate, crumple, burn, etc! Whatever you wanna do with it is ok by me!

So although some of my breakfasts and lunches are the same, there is a lot of room for me to mix it up! I don’t have to use the same veggies with my eggs each day. And instead of cheese I can use avocado – both are healthy fats.

And for my salads, I’ll use different proteins (grilled chicken, flank steak, eggs on days I didn’t eat eggs for breakfast, etc).

I’ll use different Shakeology flavors and add-ins and different veggies with my hummus! So SEE…LOTS of variety! 🙂

I will be intermittent fasting along with this nutrition plan. Which essentially just means I’ll be eating these meals in a smaller window of time (8 hour eating window: 16 hour fasting). It just helps me stay on track better, and there are some health and weight management benefits to eating this way too! If you’re interested in learning more, join my free group here.

My workout calendar is printed, and ready to be crossed off – basically a grown up version of a sticker chart. 🙂 Hey whatever works. For me…the act of crossing off my workouts is highly motivational!

Baked French Fries

I love a good french fry! But most fries don’t really fit into a healthy lifestyle, unless you make them at home, and skip the deep fry! I make these so often it never occurred to me that I should write down the recipe and share all of the goodness! I’ve tweaked the ingredients and the amounts over the years and finally hit the sweet spot!

These are very crispy and you won’t miss the extra oil. 🙂 You’ll just have to decide if you want to share them or not! 😉

HOMEMADE FRENCH FRIES

(makes 6 servings)

 

Ingredients:

  • 4 large russet potatoes
  • 1/4 cup olive oil
  • 1/4 grated parmesan cheese
  • 1 T. Everything seasoning (or something similar)
  • 1/4 t. cayenne pepper
  • pepper
  • sea salt

Directions: 

  1. Preheat oven to 460°. 
  2. Line a large baking sheet with parchment paper (helps the crisp factor).
  3. Cut potatoes into french fry shapes. The smaller and thinner you slice, the crispier they’ll get!
  4. Add potatoes, oil, parmesan cheese, seasonings and pepper to the bowl (salt comes later).
  5. Bake for 30-40 minutes (depending on thickness), turning once or twice halfway through to crisp all sides.
  6. Remove from the oven and sprinkle with sea salt.
  7. Enjoy!

*These store in the fridge well for a few days too! Just pop them back in the oven or toaster oven to reheat and maintain the crisp!

Nutritional info: 193 calories per serving, 10 g. fat, 22 g. carbs, 4 g. protein

Cheeseburger Salad

When we are all running in different directions for kids’ activities and events, we have what we call FFY night – “fend for yourself”. There are almost always leftovers, salad fixins, and other quick options to choose from…and cereal in case of emergencies!

Last night was one of those nights! When I scanned the fridge, the first thing I saw was lettuce I had already chopped up for the week, a jar of pickles and a leftover burger. CHEESEBURGER SALAD! I’ve seen some different recipes circulating the internets and the Pinterest, so I used a couple of those for inspiration and ultimately created my own. 🙂

My husband is doing a keto diet right now, and this salad is keto-approved! 🙂

*I made an individual serving for my salad, but if you were making enough for the whole family, or leftovers, you can use the following amounts. For less…use less! 😉

INGREDIENTS
Salad
  • 1 lb lean ground beef (or turkey)
  • salt & pepper to taste
  • 1-2 garlic cloves (minced)
  • 2-3 heads of romaine (or whatever lettuce you like)
  • 1 cup tomatoes (chopped)
  • 3/4 cup Cheddar cheese (shredded)
  • 1/2 cup Pickles (diced)
  • 1/2 sweet onion (sliced or diced)
Dressing
  • 1/2 cup mayo (I used avocado mayo)
  • 2 roma tomatoes (diced)
  • 2 tsp mustard
  • 1 tsp white vinegar
  • 1/2 tsp Everything” spice mix (or paprika)
  • 5-6 drops of liquid Stevia (or sweetener of choice)
INSTRUCTIONS
  1. Brown ground beef in a pan over medium heat. Season with salt & pepper. Stir fry, adding garlic and breaking up the pieces with a spatula, until the beef is browned. Drain any excess fat.
  2. Meanwhile, add mayo, tomatoes, mustard, vinegar, seasoning and sweetener to a small bowl, mix and set aside. Adjust sweetener to taste. Refrigerate until ready to serve.
  3. Combine the remaining salad ingredients in a large bowl. Add any other burger toppings you like. Add the ground beef. Toss with dressing and enjoy!

Kid-Approved Fish Tacos

We have been observing Taco Tuesday for many years at my house. But that certainly doesn’t mean we’re dumping a packet of taco seasoning into a pan of ground beef and ripping open a box of Ortega taco shells. We like to get creative and try all sorts of different taco fillings and methods. And we don’t limit ourselves to tacos! Sometimes we’ll have enchiladas, taco salad or any other Mexican-inspired dishes that catch my attention on Pinterest. 😉

But these fish tacos are a definite keeper. Three out of four kids and husband agree – and that’s a successful meal in my book!

And they are 21 Day Fix approved!

Try these on your clan and let me know what you think!

 

INGREDIENTS:

Lime Crema

  • 1/3 cup sour cream or plain Greek yogurt
  • 3 tablespoons mayonnaise (I used avocado mayo)
  • zest from half a lime
  • juice of whole lime
  • 1/4 teaspoon salt

Slaw:

  • 2 cups cabbage, shredded
  • 1/4 cup cilantro, chopped
  • 2 carrots, shredded
  • 1 clove garlic, minced

Tacos:

  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground coriander
  • 1/4 teaspoon red pepper powder (more or less to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound white fish (eg. cod, snapper, talipia)
  • corn tortillas
  • 1 avocado, sliced (optional)

 

DIRECTIONS:

  1. Combine ingredients for the lime crema in a small bowl and set aside.
  2. Combine ingredients for the slaw in a large bowl and set aside.
  3. Preheat oven to 425°F. 
  4. In a small bowl combine the oil, lime juice, cumin, paprika, coriander, red pepper powder, garlic powder, sale and pepper.
  5. Pour the marinade mixture over the fish and toss to coat.
  6. Place the fish on a lined baking sheet and let it marinade in the refrigerator for about 15 minutes.
  7. Bake fish for 10-15 minutes (depending on thickness of the fish) until it is flaky when tested with a fork.
  8. Transfer the fish to a plate and break in to smaller pieces with a fork.
  9. Heat the tortillas according to package directions.
  10. Add fish, slaw and crema to the warmed tortillas and enjoy!

 

Container equivalents per 2 tacos: 1 red, 1 green, 1 yellow, 1 blue (avocado)

When Does It Start?

The group starts on June 12th and it goes day by day, live on Beachbody On Demand.  You will not be able to look ahead.  Each workout is posted live that morning.  It is a perfect way to really jumpstart your summer through my support and accountability group.

Secondly, there is a great modifier so even if you don’t like being down on the floor you can modify with Shaun T and he gives you that option.  These workouts are like the best of Shaun T – his greatest hits!
